Oyster mushroom "Pulled Pork" burger
Mushrooms:
500 g of oyster mushrooms
Vegetables:
Arugula leaves
Additionally:
3 tbsp. mayonnaise
6 burger buns
Spice mix:
2 garlic cloves (squeezed)
1 tbsp. brown sugar
1 tbsp. cocoa
1 tbsp. BBQ sauce
3 tbsp. oil
2 tbsp. apple cider vinegar
Salt
BBQ Seasoning Mix:
¼ tbsp universal seasoning
⅓ tbsp thyme
¼ tbsp. coriander (chopped)
⅓ tbsp. pepper (ground)
½ tbsp. sweet paprika
½ tbsp. smoked paprika
¼ tbsp. mustard seeds (ground)
½ tbsp. garlic powder
½ tbsp. onion powder
Caramelized Onions:
2 large onions
2 tbsp. oil

Cut the oyster mushrooms into long, thin slices and place in a bowl. Add all the ingredients from the spice mix and the BBQ spice mix, mix well so that the mushrooms are evenly coated.
Sauté the mushrooms in a pan for about 20 minutes. If necessary, add a little water to avoid burning. When the mushrooms become dark, remove from the stove.
In the second pan, fry onions cut into rings together with salt and slowly caramelize them.
Cut each bun in half and spread ½ tbsp. mayonnaise, topped with oyster mushrooms, arugula leaves and caramelized onions.
