Oyster Mushroom Goulash Soup

Mushrooms:

  • 1 kg of oyster mushrooms, sliced

Vegetables:

  • 500 g of onion (in slices)

  • 3 cloves of garlic

Liquids:

  • 600ml beef/vegetable stock

  • 3 tbsp. fat/oil

  • 2 tbsp. tomato paste

Spices:

  • 1 tbsp. sweet paprika

  • 1 tbsp. marjoram

  • 1 tsp. cumin

  • salt

  • pepper

The others:

  • 2 tbsp. flour

  1. Melt fat or heat oil in a pot and add onion, fry until golden brown.

  2. Stir in oyster mushrooms, cumin, paprika, marjoram, tomato paste, crushed garlic, and salt and pepper.

  3. Add hot broth, cook for about 20 min.

  4. Mix flour with 50 ml of cold water in a bowl, stir until a homogeneous mass is obtained. Add 2 tbsp. of soup liquid and stir until smooth. Add this to the soup, mix well.

  5. When serving, add fresh marjoram to the soup.

  6. Enjoy with fresh bread.
