Oyster mushroom tacos with mango salsa

Mushrooms:

  • 150 g of oyster mushrooms

Vegetables:

  • 1 onion

  • 3 cloves of garlic

  • 1 paprika

  • 200 g of black beans

Spices:

  • 2 tbsp. chili powder

  • 1 tbsp. ground cumin

  • 1 tbsp. oregano (dried)

Liquids:

  • 2 tbsp. oil

Additionally:

  • 8 tortillas

  • Salt

  • Pepper

For the salsa:

  • 1 mango (diced)

  • 4 g fresh coriander (chopped)

  • 0.5 fresh onion (thinly sliced)

  • 1 tbsp. honey

  1. Sauté onions, peppers and mushrooms in a pan until they become soft and a little brown. Add salt and pepper to taste. Add crushed garlic, chili powder, cumin and oregano. Bake for a few minutes until the aroma is noticeable. Add the black beans and cook for another 5 minutes.

  2. Mix all the salsa ingredients in a bowl.

  3. Fill the tortillas with the mushroom mass from the pan, followed by the salsa sauce.
