Oyster mushroom tacos with mango salsa
Mushrooms:
150 g of oyster mushrooms
Vegetables:
1 onion
3 cloves of garlic
1 paprika
200 g of black beans
Spices:
2 tbsp. chili powder
1 tbsp. ground cumin
1 tbsp. oregano (dried)
Liquids:
2 tbsp. oil
Additionally:
8 tortillas
Salt
Pepper
For the salsa:
1 mango (diced)
4 g fresh coriander (chopped)
0.5 fresh onion (thinly sliced)
1 tbsp. honey
Sauté onions, peppers and mushrooms in a pan until they become soft and a little brown. Add salt and pepper to taste. Add crushed garlic, chili powder, cumin and oregano. Bake for a few minutes until the aroma is noticeable. Add the black beans and cook for another 5 minutes.
Mix all the salsa ingredients in a bowl.
Fill the tortillas with the mushroom mass from the pan, followed by the salsa sauce.
