Avocado Pesto Pasta with Oyster Mushrooms

Mushrooms:

  • 200 g of oyster mushrooms

Pasta:

  • 450g pasta

The others:

  • 1 tsp. butter

  • 1/2 tsp. salt

  • 1/4 tsp. garlic powder

For the Pesto:

  • 1 large avocado

  • 3 cloves of garlic

  • 50g of Parmesan or Djiuga cheese

  • 60 g of cedar nuts

  • 60 g (2 cups) basil leaves

  • 2 tbsp. olive oil

  • 1 tbsp. lemon juice

  • salt

  • pepper

  1. Cook the pasta as directed on the package.

  2. Mix all the pesto ingredients together and mix until smooth.

  3. Melt the butter in a pan, fry the sliced oyster mushrooms until they start to brown.

  4. Add garlic powder and salt, fry for another 5 minutes until completely brown.

  5. Mix pesto sauce with drained pasta and top with fried oyster mushrooms.

  6. Serve immediately!
