Avocado Pesto Pasta with Oyster Mushrooms
Mushrooms:
200 g of oyster mushrooms
Pasta:
450g pasta
The others:
1 tsp. butter
1/2 tsp. salt
1/4 tsp. garlic powder
For the Pesto:
1 large avocado
3 cloves of garlic
50g of Parmesan or Djiuga cheese
60 g of cedar nuts
60 g (2 cups) basil leaves
2 tbsp. olive oil
1 tbsp. lemon juice
salt
pepper
Cook the pasta as directed on the package.
Mix all the pesto ingredients together and mix until smooth.
Melt the butter in a pan, fry the sliced oyster mushrooms until they start to brown.
Add garlic powder and salt, fry for another 5 minutes until completely brown.
Mix pesto sauce with drained pasta and top with fried oyster mushrooms.
Serve immediately!
