Broccoli Soup with Oyster Mushrooms

Mushrooms:

  • 150 g of oyster mushrooms

Vegetables:

  • 500 g broccoli, divided into smaller pieces

  • 100 g potatoes, cut into cubes

  • dill

Liquids:

  • 100 ml sweet cream

  • 100 ml sour cream

The others:

  • salt

  • pepper

  1. Put cut oyster mushrooms in a pot with water, add salt, cook until the mushrooms become semi-soft. Add broccoli and potatoes, cook until all ingredients are soft.

  2. Mash the potatoes and broccoli with a fork.

  3. Mix the sweet cream with the sour cream and add to the soup. Boil for 7 minutes, add salt and pepper to taste.

  4. Top with fresh dill before serving.
