Oven-baked oyster mushrooms with mashed potatoes
Ingredients:
1 large Lion's Mane mushroom
1/2 cup beet juice
2 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon red pepper
Fresh herbs of choice (rosemary, thyme)
Heat the oven to 200°C. If the oyster mushrooms have large caps, they can be torn into smaller pieces.
Place oyster mushrooms, unpeeled garlic and onions in a baking pan. Drizzle with olive oil and herbs, grated butter, and salt and pepper.
Put the baking pan in the oven and bake for about 30-45 minutes until the mushrooms become crispy.
Served with mashed potatoes.
