Greek salad with oyster mushrooms

Mushrooms:

  • 250 g of oyster mushrooms

Vegetables:

  • 1 avocado

  • 1 red onion (cut into rings)

  • 2 tomatoes (sliced)

  • 1 cucumber (sliced)

  • 2 carrots (roughly grated)

  • 1 bell pepper (sliced)

Liquids:

  • 2 tsp. olive oil

Additionally:

  • Lemon

  • Salt

  • Pepper

  1. Heat olive oil in a pan, grill the oyster mushrooms in it for about 10-15 minutes until they become crispy. Add a pinch of salt.

  2. Mix the remaining ingredients in a bowl. Add olive oil, salt, pepper and lemon juice. Mix well and let the flavors mingle. Place oyster mushrooms on top and serve.
