Greek salad with oyster mushrooms
Mushrooms:
250 g of oyster mushrooms
Vegetables:
1 avocado
1 red onion (cut into rings)
2 tomatoes (sliced)
1 cucumber (sliced)
2 carrots (roughly grated)
1 bell pepper (sliced)
Liquids:
2 tsp. olive oil
Additionally:
Lemon
Salt
Pepper
Heat olive oil in a pan, grill the oyster mushrooms in it for about 10-15 minutes until they become crispy. Add a pinch of salt.
Mix the remaining ingredients in a bowl. Add olive oil, salt, pepper and lemon juice. Mix well and let the flavors mingle. Place oyster mushrooms on top and serve.
