Primavera Pasta with Oyster Mushrooms

Oyster mushrooms:

  • 200g oyster mushrooms

Pasta:

  • 400g penne pasta

Vegetables:

  • 15 cherry tomatoes, assorted colors

  • 3 garlic cloves

  • fresh basil leaves, finely chopped

The rest:

  • freshly grated Parmesan or cheddar cheese

  • olive oil

  1. Cook the pasta as directed on the package.

  2. Cut off the stems of the oyster mushrooms and slice the caps into strips.

  3. Heat the oil in a pan, fry the onions and oyster mushrooms until they turn golden brown.

  4. Cut the tomatoes in half, add to the pan cut side down.

  5. Drain the pasta and add it to the pan, season with salt and pepper, and fresh basil – mix everything together.

  6. Top with freshly grated cheese before serving.
