Simple Oyster Mushroom Soup

Mushrooms:

  • 350 g oyster mushrooms (thinly sliced)

Vegetables:

  • 2 cloves of garlic

  • 1 onion

Spices:

  • 1 tbsp. marjoram

  • 1 tbsp. sweet paprika

  • 1 tsp. smoked paprika

  • 1/2 tsp. cumin powder

  • chili powder

  • coarse spice/chopped parsley

  • salt

Liquids:

  • 1 l vegetable broth

  • oil

The others:

  • 2 tbsp. pea flour

  1. Caramelize the onions in the pot, add all the spices except marjoram. fry for about 30 seconds, add the broth.

  2. When the broth starts to boil, add the oyster mushrooms.

  3. Mix the pea flour with 50 ml of water in a bowl. Stir until the mass becomes homogeneous.

  4. Boil for about 10 minutes, add crushed garlic and marjoram.

  5. Before serving, sprinkle with chopped parsley.
